Paula's Broccoli Salad

1 large bunch broccoli
1/2 lb. bacon - fried crisp and crumbled
1 cup chopped celery, thin
1 cup red seedless grapes
1 cup green seedless grapes
1 bunch green onions - chopped
1 cup toasted, slivered almonds

Dressing:

1 cup mayonnaise
2 tblsp. vinegar
1/4 cup sugar

*Add dressing one hour before serving.

Strawberry Spinach Salad

9 cups torn fresh spinach
1 pint fresh strawberries, halved
1/2 cup slivered almonds, toasted

Dressing:

1/4 cup vegetable oil (I used olive oil)
2 tablespoons sugar
2 tablespoons cider vinegar
1 tablespoon chopped onion
1 teaspoon poppy seeds
1 teaspoon sesame seeds
1/4 teaspoon paprika
1/8 teaspoon Worcestershire sauce

In a large bowl, combine the spinach, strawberries and almonds. Place dressing ingredients in a blender; cover and process until combined. Pour over salad and toss to coat. Serve immediately.
Yield: 6-8 servings
Dell Salad

1 small package lime jello (or any flavor)
1/2 cup boiling water
1 tsp. vinegar
1/4 tsp. salt

Let cool.

6 oz. or 1 cup cottage cheese
1 cucumber, diced
1 small onion, diced
1 cup salad dressing

Mix all together. Put in jello mold and let set.

*This was my mother's recipe. I have to admit that I despised it! I will never forget the time my Aunt Marie was the cook at my grade school and she made this jello salad. Every kid there hated it. I never told them my Mom made this salad!

Fruit Cocktail Salad

3 cans fruit cocktail
1 pt. whipping cream
1/2 cup Walnuts, chopped

Drain fruit cocktail. Whip whipping cream according to directions and desired sweetness. (I use powdered sugar until I get the desired taste.) Fold in fruit cocktail.

**I usually add the nuts individually, since my husband does not like walnuts.
